Granted, I don't think I've watched them all, but I do remember way back when that's all it seemed good for. I'd be surprised if there was any other real purpose to it

It's implied its a post-WW! apocalyptic wasteland and salad fingers is one of a few "inhabitiants". As far as I can tell ALL of the dialog in the series in in his head except for the little girl speaking to him, which causes him to have a mental break. I think he's gone so long without hearing another person speak that it's horrifying to him.

The entire point of salad fingers is to weird out the viewer. Thinking too much into it is missing the point but there are videos out there that try to dissect salad fingers as a character.
