I'd like to read X-Men, preferably the main long running Uncanny X-Men (Days of Future Past and all that)
I hear people say to start at Giant Size X-Men, is that a good idea? I find 60s Marvel comics to be totally enjoyable, whereas some people hate it, if that helps
Are the "Before Watchmen" comics good?
I just don't feel like reading them but if some are good I will give them a try

I'd really like to get into Herc and Cho as characters. I read Prince of power when I was like 15 and really liked Cho basically not having any powers but just had such street smarts of the mythological world he survived.
BUT A huge part of that was his relationship with Hercules which I know nothing about. I remember the huge funeral issues that came out around his death(?) but I've never read anything with Hercules in it.
and all /co/'s told me is that he's a giant slut.

Moore/Delano/Claremont's Captain Britain. Pretty much everything included in his omni is solid.
Motormouth & Killpower is also pretty fun.

Ellis's Excalibur v1 run, #87-103. You can keep going after this, but the quality takes a nosedive once Ellis leaves the book.
Wisdom MAX #1-6
Captain Britain & MI-13 #1-15 + annual. They had a Heroes Reborn short as well, but it was only a couple of pages.
Other than that, he's been shit or only appeared as a guest bit (which might also be shit, like in Gambit). His appearances in Spurrier's X-Men Legacy were pretty good though, #13-14.
AVOID Claremont's New Excalibur. It's fucking garbage.

All New All Different Hercules is definitely worth a read.
Herc is a big slut, got into a lot of trouble for it and the comic revolves around him trying to be seen as a true hero since again, he's been branded as a gigantic burden to society.
He's also roommates with Gilgamesh

Incredible Hercules comes right out of Incredible Hulk. Herc and Cho were a big part of the Renegades during WWH. You're fine just reading only the later Incredible Hulk issues, starting at least with v2 #107. The book changes over to Incredible Hercules with #112.
Herc and Cho were also part of Hickman's Mighty Avengers v1, starting with #21.
