I don't think they're all necessarily gone. Aku's existence does not necessitate that all those characters in the future existed. Some might, some might not. I assume that the majority of the characters do not exist because of Aku. But, even with that said, they may not exist in the way that we are familiar with. Like the Scottsman. He might exist, but he would not be the battle hardened warrior that we know him as. Instead he might not have lost his leg and he would have lived long enough to see his daughters married off (most of them anyway).

So for the ones that do exist will have an objectively better existence. That is to say that Jack's world isn't the same as our world and that Trump becomes president. Then he just delayed the inevitable.

I think the whole ending is pretty similar to the true pacifist ending in undertale. The idea is that Aku is the villain trying to trick or even force the player (Jack) doing the wrong things, or to the wrong and the worst possible ending. For the characters in the future, they are like major characters on the second true pacifist route where most of major characters retain some kinds of experience from your last true pacifist route, and those characters somewhat remember what you did before. So, Ashi may or may not retain all of her memory, but what she experiences does not reset completely.
