Yeah, no. The slightest change to the past can have massive effects to the future. One missed train ride or someone turning left instead of right at a fork in the road can have cascading affects of two people meant to fall in love never meeting, people meant to die surviving, people meant to live dying, people meant to exist never being born, etc., etc.

I'm marathoning this because a friend told me it was great and I've heard it's great without getting it spoiled.

But does it get good? I've watched 3 or so episodes and the show just kinda plods around all over the place so much it's getting annoying. The characters are all certainly quirky.. and some are cute but beside their quirks they just all don't act like people in the slightest, and feel overall really flat and dull.

Yes, but Samurai Jack existed before Bioshock Infinite popularized branching timelines in media. In Samurai Jack's world, there is only one timeline, and he erased the future by going back and killing Aku.
Also, the non-branching timeline is referenced by Ashi dying. If it were just a new timeline and he had abandoned the one with Aku, Ashi would essentially just be a dimensional hopper and not really suffer the existential paradox death.

Once Jack left the dystopian timeline to kill Aku in the past, current/future Aku ceased to exist just like Ashi did in the peaceful timeline. Now that his tyranny is over, all of the factions will unite to rebuild their worlds.

Solving the Time Issue:

The latter is emphasized heavily with the "foggy woodlands" and "letting go of the lady bug."

The foggy woods is a visual trope that represents loss and confusion. Mixed memories. Etc.

The Lady Bug represents his memories of Ashi, leaving him. He is relieved to be at peace and forget, hence the smile.

Once her memories leave him, the Lady Bug, the world brightens up and the fog is gone.
