Well let's see here...

Toph's entire character wouldn't work. The whole "chip on her shoulder" plot point would unravel or not be there to begin with. No one cares that she's blind she can """see""" just fine anyway it's not like her vision or lack thereof ever really drove the plot. Toph is the way she is because of the perception the world had on her, and most of that is attributed to her sex. This sexism also affects Katarra at the North Pole during her arc.

Speaking of which Katarra couldn't be the mother of the group if she was a boy, and her affliction for healing would just be weird. Being male was basically Sokka's entire character, and the relationship between Azula/Zuko would just be weird as fuck if a man was running around beating the shit out of his scarred sister

A lot of the show's character dynamics revolve around traditional gender roles. A young boy who wants to avoid conflict instead of start it. A prepubescent teenager trying to act macho. The older sister who must control everything.

The conflict between Zuko and his dad is very much a cliche man-and-his-son kinda thing. Toph is obviously a big one and while yes, she was supposed to be a guy, her entire character became iconic because she was the rough tomboy girl.

It would be a drastically different show if the genders were swapped and I feel like it would definitely be worse off.

I don't think it was ever established that Fire Nation had male primogeniture as the order of succession. No one ever questions Azula's skill or right to rule the throne because of her gender, and we even see that there are female guards working in their highest security prison.

I still don't think those arcs work well if the genders are switched though. Zuko's arc is rooted at least partly in fulfilling gender roles, as he is punished because he's naturally compassionate towards his country's soldiers rather than being detached from the consequences of war.
