I know a lot of people will disagree or say I'm just waifuing, but I genuinely loved the fact that, at the end of the day, she was just a sociopath that wanted to see everyone suffer and refused to show even the smallest sign of niceness.

yeah, that happens to jerks. and the nice thing it's, even if she saw being a jerk was making her miserable, she didn't change her ways, because that's what she is: a totally spiteful person. Doubtful. But, as you said, sadly there isn't a third season, so as far as we know she's been evil all the time.
And the only thing I've read McCracken say about S3 plots is that Hater was going to have to deal with being considered a hero against his will, nothing about any sort of Dominator's redemption arc.

They were definitely going to redeem her. At the very least what we got by the end of season 2 definitely wasn't skewing a setup for irredeemable sociopath.

you can argue there were signs that she could finally be going to accept friendship, and there totally were but, as i see it, even in teh last second of the show she just can't stop being hateful towards everybody.
even the guy that just saved her life.

But I guess you just give more value to the hints that she's reedemable, and that's absolutely ok.

I probably just really like the idea of her being irredeemable because having an irredeemable villain it's a really fresh concept in today's TV animation.
Not that's bad to tell children that everyone can be nice given the chance, but if we only create redeemable villains we loose another lesson: that sadly we can't get along with everyone and that some people are just mean without a clear reason.

What makes a great character is characterization.

A 1-dimensional villain can still be great as long as he has an engaging personality, offers a genuine threat, and works with the tone of the story.

Every great character has different traits, but the fact that a villain just feels that he loves to make other people suffer doesn't mean he's a bad character.

the importat thing is not making "I'm evil" all the character. they can do bad stuff just because they like it but they also need other characteristics. Like, I dunno, maybe they have a great sense of humor, or maybe they love art or are ridicolously obsessed over their image and so on.

Her showing indications of still clearly wanting to be evil isn't hardcore proof she was going to remain this way permanently when also paired with obvious setup for her learning to be a better person. Or at least that was gonna be the case if there was a season 3.

Under most circumstances Freeza seemed like an actually cool boss

His subordinates were all a bunch of assholes and backstabbers anyway but Freeza himself was honest and polite from the looks of it, until an actual threat to him or his goals came up or someone was stupid enough to disrespect him
