Spider-Man TAS Black Cat's hair turned white when the Kingpin injected her with a version of the super soldier serum. It goes back to blonde every time she reverts back to her normal state (and yes, hair doesn't actually work that way. Nor muscles.)

Regular Black Cat just has white hair. Some people just go grey early in life.

Satan, my whole family was named after the fact that we used to be born with white hair. We're called Wittkamp, literally meaning White Head. Current generations only start platinum blonde and grow darker later in childhood. My aunt, on the other hand, went completely grey at 18 and dyed it black until she was about 40, when seh decided "What's the point" and left it in its natural color.
