Hell, even Elves and Dwarves can work if you actual put effort into make their lore interesting and unique (see the elder scrolls lore, especially Morrowind). Just don't copy Tolkien or DnD.
Need inspiration, do what Tolkien did, make a race based around mythological creatures, just look up some folklore, find something cool, and start designing a culture and society around it.

Like, how often do you see a Penanggalan in a fantasy setting? Or say you make a race of giant insectoid creatures in a world set in what is the equivalent of the victorian era, what could their cities look like, what if they had trains and shit?

Get creative, don't just do what everyone else does.

Even if they're immortal I'd like to see a story that isn't staring some pseudo perfect "I studied the blade/bow for 100 lifetimes" crap. Whenever there is an RPG party the elf always feels like they don't belong. Everyone is fighting for whats going on but the elf could just fuck off back to their invulnerable ancient city and dick around until Armageddon. It really varies from setting to setting but the elf is always the pompous self righteous superior being while everyone else in the party is some sort of equal. I want to elf to be equal with everyone else. For there to be a real sense of danger and an adversary that hopefully isn't just some evil elves.

I remember in an RPG campaign once, I was playing an elf who was full of himself, but not in the sense that he thinks he's great because he's an elf, he thinks he's great because he thinks he does shit that is cool as shit. He saw others as equals and respected the shit out of them the more they thought he was cool or offered constructive criticism to help him become the cool dude he knew he could be. He was a boastful goof that was more reminiscent of human characters, which I attributed to him growing up in some elf town bordering some human kingdom that kind of adopted some human mannerisms.

That's actually a completely legitimate and believable way to play a paladin. They aren't all just automatically lawful stupid, and a good paladin knows when kindness and an even temperament will win the day. That coping thing is an interesting angle to go at it from, especially since that would mean gays are disliked in the fantasy world you're in for some reason. I have a sort of reverse of that with my current paladin who is a tiefling in a world where demons are kind of fucking shit up and everyone thinks he's a paladin as a way to repent, but he just grew up in an accepting area and became a paladin because he thought it was the best way he could help people.

Not to go /his/ on a subject I'm only vaguely familiar with, but I'm pretty sure it as the opposite. People in power always find ways to get away with shit while in poor, closely knit communities being "different" would lead to at least social ostracism.
