There's also the fact that the lions are designed to be generally easy to pilot. In some cases, the lions are the one guiding the paladins. The lions may as well be a child's toy to Allura, who has Altean tech knowledge to top it all off.

I personally think when Keith asked about Blue, Lance got a small scare about Keith possibly taking it over. His insecurity showed yet again in that scene. He's afraid of being left behind. As for blue, my idea of it is that it senses pilots who are the most likely to bring to team together much like how Yellow's pilot does. The two legs are the pillars.
