He'd be an uncanny valley-looking godlike entity who appoints himself grand judge, jury, and executioner with all who displease him, essentially making himself the de-facto ruler of Earth. Obviously he sees himself as benevolent and enlightened, but in the eyes of Superman, he's a psychotic tyrant who must be stopped.
A psychedelic confrontation of pure power-wank would ensue as the two ridiculously OP beings of all time go head to head, with Superman obviously coming out on top, probably after Stardust throws him into the sun only to give him an even bigger power boost.

So I was working on my own little "public domain universe" and this is what I had for my reimagining of Stardust:
>Stardust is the avatar of a living star, a mass of neutron matter with excellent quantum control of local spacetime, as well as all manner of highly advanced technology gathered over eons of existence, so advanced as to appear magic to Earthlings. His form is not fixed, but having made distant observations of Earth has modelled itself on those we look up to most, superheroes, towering over others and modelling a rudimentary sense of justice and compassion that is “expected” of a superhero. Stardust appears to be an arbiter of space justice, having travelled around to stop criminals on many different planets. However, when he discovered Earth Stardust became unhealthily fixated with protecting the world from anyone. Whilst he was easily able to stop any criminals he observed, people soon became uncomfortable with Stardust because he acted as judge, jury and executioner as well as policing the world, quite often killing criminals for reasonably minor crimes, as well as severe collateral damage and loss of innocent lives, despite the fact that with his seemingly limitless powers he could easily use non-lethal means to stop any such criminals.

His residence is a “private star”, a mobile gladiatorial arena of gargantuan size, in which he pits beings against each other, viewing combat as the only “fair” way to test the worth of a being’s ideals and principles.

It's genuinely surprising to me that people like Warren Ellis, Mark Millar and Grant Morrison have never made use of him. Alan Moore did a little bit in one of the prose sections of League of Extraordinary Gentlemen, but it seems like there's plenty of writers who could do something pretty entertaining with this kind of surrealism.
