Vision has to lose the Mind Gem for the plot to move forward, but just dying, and staying dead by the end of Avengers 4, would be the least interesting way they could go with it.

He might not have cared if it could kill him or not. After all Vision is basically a machine so Thor might not exactly have placed any stock in the value of Vision's existence apart from being the vessel of the Mind Stone.
But apart from that, I'm inclined to think Vision's entire functionality is purely based on the necessity of the Mind Stone. Ultron designed him to have it, and it's what powers and sustains him. So, assuming that the Mind Stone also isn't basically his brain given that Wanda can telepathically control the Mind Stone, if it's removed and doesn't kill him imediatly, then he'll probably just slowly die over the course of the film and finally kick when it's too late because nothing else short of another Infinity Stone can keep him alive indefinitely.
And with that I'm now picturing Stark hooking Vision up to an Arc reactor like an Iv bag to buy time.

She and Vision are among the most important Avengers (maybe *the* most) because they're not stars, so the writers could do whatever they wanted with them and give them all the character development that the stars couldn't get.
