I wish they had shown the Hammerhead launching escape pods, evacuating down to just the handful of brave volunteers needed for the maneuver. As it stands, it kind of comes off like the Rebels just sacrificed a whole ship and all its crew at the drop of a hat like it's just business as usual.

This isn't the story of plucky rebels surviving, but people dying and fighting for Freedom and whatever it entails. Character shields are only for OT characters or people who sit in the behind.

I'm confused about Chosen One who was supposed to bring balance and destroy the Sith.

Is it Anakin or Luke?

I was always under the impression it was Anakin (TPM, The "Mortis Trillogy" and ROTS all support this) and even though he fell to the Dark Side he threw the Emperor off the ledge in the end before dying, thereby fulfilling the prophecy.

However, in "Visions and Voices" and "Twin Sons" the holocrons point to Tatooine as the "key to destroying the Sith" and Maul asks Obi-Wan is the one he's protecting is the chosen one and he says yes.

I think you have to understand that in that moment -- after the terrible loss of Anakin in Obi-Wan’s eyes -- that Anakin is not the Chosen One to Obi-Wan Kenobi and that Obi-Wan is hoping that “that boy is our last hope,” and that Luke Skywalker is the Chosen One. I always wonder about the Chosen One and the mythology of the Chosen One because it’s clear George will tell you that Anakin is, in the end, the Chosen One. And the Jedi say at one point maybe this is a prophecy that’s been misread. Yoda says that in Revenge of the Sith. I think in a way it’s that nobody understood what it was going to take for the Chosen One to achieve his goal - this selfless path. It’s not that he was going to come as a warrior and destroy the Sith. Obi-Wan says “You were supposed to destroy the Sith, not join them.” But we’re not thinking in the right way. It’s really the selfless act of his son -- to go before the Emperor, to throw away his weapon -- that inspires the selfless act in his father. That’s the core of this whole idea of the Chosen One. It’s just that Anakin is close enough to the Emperor in the end to actually do it and the Emperor can’t see this selfless action.

I always took it that Luke is the last person trained in their dogmatic view of jedi philosophy. They tried to mold Luke to their misguided views of what Anakin should have been. I never considered any of the shows or books or games or whatever as relevant to the movies.
I mean you, you can have your 1/10th of second cameo that's only visible on the widescreen edition of the blu-ray but ultimately if they don't actually APPEAR in the movies as an actual being, they don't exist.

Luke literally just learned about the Force after ANH, and would probably be obsessed with tapping into more of what Obi-Wan was trying to teach him. Kanan and Ezra are openly Jedi (Or at least Force users), and if they're still alive and part of the Alliance post-Scarif, I see no reason why Luke (Now being pretty high up in the Alliance command chain) wouldn't go looking for them. I'd find it hard to believe that none of the Rebels would go "Oh, you knew an old Jedi dude? We have two Jedi in the club, yeah, they're awesome".

Luke ends up realizing that both paths are dangerous. He doesn't want to kill Vader or join Palpatine, he just wants his dad back, a dad he never really knew.

If they aren't dead, they'll have to be missing or have been drummed out of the rebellion. Luke interacts with people who have met Kanan and Ezra, yet in Heir to the Jedi he's stuck working alone on his noodle bending skills.
They're dead, dead to the rebellion leadership, or somebody has a lot of 'splaining to do.
