Well, in all fairness, Fallout needs to feature a bleak setting. If the nuclear wasteland were ever recovered from it (which naturally it would have to at SOME point hundreds of years afterwards) people probably wouldn't really recognize it as a Fallout game.

That doesn't explain their choice to make the games hundreds of years after the nuclear holocaust though.

Fallout works with a timeline of bombs +80 because it tastes the Wasteland as the Wild West; you have small, permanent settlements like Shady Sands or the Hub that are prey for roving gangs of raiders, but they're pretty durable and insofar as they're scummy little shantytowns, it's an aesthetic choice consistent with the setting.

Fallout 2 advances the timeline to bombs +160 and those scummy little shantytowns have expanded into bona fide cities, at least within the limitations of what the game engine can depict, and the context is that there's so much more NCR that you can't actually see south of the playable overworld map.

Fallout 4 is, what, bombs +300 and change? And you've had people squatting in the ruins of Fenway Park for the whole time? That shit wouldn't look half as good after 300 DAYS without recurrent maintenance, there's no way that Boston wouldn't just be a gravel pit with the occasional rusted I-beam sticking out after three centuries of neglect.

Fallout 3 and 4 work up to about ten years out from the Apocalypse, but much more than that and nature takes its toll on the works of men; notwithstanding the stabilization, one way or another, of the post-nuclear political situation.
