Why aren't any of the people Jack has met and helped bothered when he tells them he's going back, back to the past to kill Aku and prevent this future from ever existing?
Shouldn't they, you know, WANT to exist?
Anything is better then living in a Aku world
We don't know how far Jack got flung into the future so there's a chance that some of our favorite characters should still exist
It's pretty much impossible, so they aren't that concerned.
Also, there's a good chance that it'd just make a split timeline, and they'd all be fine anyways.

I'm just asking myself why Jack bothers to help so many people in Aku's world when it's going to vanish anyway when he leaves

Because if he didn't help the sword probably wouldn't work.

He does it on the off chance that he never gets back to the past. Better to waste time helping people than failing to get back to the past and leaving those people suffering.
Did anyone else think Jack was thinking "Why can't women just shut the hell up?" when he killed Ashi?
