Because part of him wanted those girls to kill him. He got sick of fighting seemingly never ending hoards of robots. Ghost jack mentioned that. But then when he found out they were people and not robots, he remembered his father and that gave him reason to fight instead of run this time. Also he might just have had a murderboner, so there's that too.

Like if that had been another routine round of robot beetles instead of real people, Jack probably would have laid down on the ground and spread his asscheeks halfway through the fight since he would have never had the flashback.

Surprise attack is a pretty crap way of explaining away the complete 180 in power levels. The element of surprise was lost almost immediately and the fight was a prolonged slug fest, only now the daughters were suddenly slower than him despite Jack just recovering from being half dead.

The first 2 kills were from the surprise attack. Afterwards, when he no longer had the element of surprise he immediately started running. During the next fight, he managed to get one more but started getting overwhelmed by the last 3, so he moved on to that log over the cliff where they would have to 1v1 him and lose their numbers advantage.

Remember from previous seasons, Jack has fought and excelled in this element whereas the girls have literally never been outside before. Basically, first fight girls ambush + home turf advantage (catacombs/tunnels), second fight Jack ambush + home turf advantage.

The daughters took the greatest hit losing their first member, honestly after he speared those other two early on they had probably already lost.

And they aren't THAT fast When they ambush him they APPEAR fast because they keep tagging out with one another. Very clearly in episode 2 he can outrun a gang of them. When he's ambushed its entirely different to when he's fighting them in the temple, and their power level is eqivalent to the temple scenes.

These girls had trained to fight as a unit and once they were down to 4 it was pretty much over.

The two primary manifestations of his inner demons are the samurai and his parents (which I believe represents death and failure respectively). Lad I know that. But the context of this Season is that he's lost his purpose. He's not setting out to kill Aku, he's "abandoned" his people and doesn't feel like he has a place in this world.
That's where the crux of his problems lie and I saw nothing in Episode 3 that took that away. So to say Episode 3 is the embodiment of "Jack is Back" seems a bit much when he's still a bit lost and only killed because he had to. His fighting skills have always been top notch, it's not like Episode 3 was a repurposed Jack who after 50 years has decided to get his shit together and kill Aku. He was just Jack backed into a corner who remembered his fathers words and felt killing them was fine.
But even then, his suicidal tendency wasn't really addressed, was it? Why fight with purpose this episode and not the last? Can't have anything to do with his fathers words about killing since in Episode 2 all he saw was nuts and bolts

The first thing he does after finding his sword is shave himself with it.

If you watch the scene where he beats them, he basically just slashes each of them across the chest once, except the princes who he punches out, and Boris who has his small explosives thrown back at him.

The only one who might be dead is Boris, but he's a big strong guy and didn't even seem more than knocked out by the blast. The Princess gets up of her own accord after, and the rest, at worst, probably have a gnarly flesh wound or two.

The first episode was a mess due to a reintroduction and a dissemination of a lot of important plot elements, but episode 2 and 3 are a full return to form and demonstrated all of the visual upgrades they were able to do and the high points pacing and atmosphere that made the original cartoon great.
