Lapis and Peridot in the show do not give off romantic vibes to me, at least thus far. They're certainly close friends by now, but I feel that there's little indication of whether it's a deeper emotional bond or just a good mix of personalities/interests on the surface level.

There are lots of fanart that are certainly pushing the couple in that particular direction, but then again pearlmethyst was pretty trendy back in s1.

That said, I am also interested in Lapis's issue with the CG to be resolved/discussed so that they can diversify the pairings/interactions among the group.

Peridot's are engineers/kindergartners, right? They're around a lot of technology, which is usually made of metal. Era 1 Peris probably had metal powers for convenience sake.

Lapis also uses them directly for her job. Water is a powerful agent of erosion and environmental upheaval.

I can only kind of explain Ruby's fire power, though. Maybe they're made head resistant so they can enter atmospheres without so much damage, like Navy did? Fire might have offensive potential.

I have no idea what a Sapphire would use ice powers for. They probably slapped them on our Sapphire to compliment Ruby's fire powers.

It'll be interesting if we ever see a fight with a diamond to see if they have some kind of really impressive combat powers besides their size - White Diamond's corruption of all of those retreating gems seemed pretty likely to be just one of her own innate abilities, and if corruption is "damage from the diamonds" IE. not a damage from some kind of homeworld weapon, then they're probably pretty terrifying fighters, excluding bd only possibly.
