I think it's less that and more that the creators/writers don't like anime. If any anime character is up against a non-anime character they rarely do well. And in an anime only battle they leave out like half their feats and choose what they've heard about. For example in the "Lee-off" Rock Lee is pretty much written off after a Hidden Lotus.

Just stepping in, but even assuming all characters just move at human/slightly above human levels, Gaara still has an absurd advantage. He has access to ninjutsu, also known as "bullshit dodging". As another anon pointed out, at one point he's being ping ponged around a large gym sized room like his opponent is the bloody lord of Tekken. In the middle of all this air juggling he manages to, in the blink of an eye, pop out of his sand shell and teleport to safety. He also appears largely unharmed, despite his armor actively being cracked and destroyed.

That is Gaara as a kid. As an adult he is significantly more well versed in both taijutsu and ninjutsu. It's like, really not a fair fight at all. Even assuming both have equal control over the relevant elements, Gaara also has the spirit of his dead mother in his sand. We've seen people get into a bend-off before and it's largely a contest of wills/skill. I think "dead mother fighting to protect her kid" somewhat trumps "random blind chick that likes to fight" in terms of determination, and that isn't factoring in Gaara himself.

Again, it's terrifically one sided.

Being in the air means nothing to her, as she can feel the earth moving, regardless of where it is. And if her power is to 'control sand', i see no reason as to why she would not be able to. We don't really see anyone trying to use Gaara's sand against him so it's hard to say how it would play out, but having your chakra in it (and again: he has his mother's chakra as well) doesn't explain how Toph would not be able to move it.

The plot (there seriously is one) of smash brothers means you're using two statues pretend fighting as a basis for judging the power of the "real" characters.

It's through speed. It is explained in the manga (there is nothing 'magical' going on, they just move fast). In the lee x gaara fight, it is also shown that Lee closes his eyes for a couple of seconds, giving time for the subistitution.

Gaara would not even be able to react to an attack from his own skin, what to say move fast enough to make a subistitution.
