Just think of it this way, without character interactions and development would we care about the magical adventures as much? For me at least, I like stakes with my adventurin' and romance can be an efficient way to motivate a character to action and provide another venue to explore their personality. So far they've done an okay job with mixing the high school romance with comedy and actiony scenes, so I'm gonna give them the benefit of the doubt. If Ludo decides to stop attacking Mewni to spill spaghetti over another monster girl who doesn't know he exists for 16 episodes I'll probably reconsider.
