The point is she never learned the technique to do things, she just does them. And she knows that she doesn't know how, because she solves everything with brute force and/or imagination. When she tries to do it with something as simple as moving an apple across the room in one piece, her nerves get to her and she either overkills it or makes it more complicated than it has to be. Even though she had no trouble magically constructing ships in a bottle in another episode, because she was very focused and calm in doing that.
She's basically a savant; her ability isn't the problem, what Glossaryck tries to teach her and Baby is testing her for is discipline and control.
