Since we're discussing pizza, I'd like to talk about some pizza theory. Specifically, how one area develops a certain style of pizza over time.

I don't quite get how New York-style pizza became the style of New York, for example. Logically, if someone already has a certain way of making a pizza, you shouldn't go making your pizza in the same way, unless you're better at it. Take St. Louis pizza. Why the /hell/ would everyone go making their pizzas thin-crusted and cut into squares if there's already two or three guys making it that way, unless you're the absolute best at making thin, square-cut pizzas? You'd think people making pizza that way would diffuse and move to another area instead of everyone making the same kind of pizza in the same place.

I grew up up the street from a crazy good Italian restaurant that used to let us order out. Genuinely god-tier pizza (I have it on the authority of friends who have lived in Italy and have Italian family, I'm not just speaking from nostalgia here). Same size as a large from Dominoes. Even to this day, only costs £10. A large from Dominoes is, what, £16?

How do they justify such spiked prices? I only buy it now because there aren't any good pizza places around where I live, supermarket pizza is true garbage, and I'm not a good chef and haven't found the time yet to increase that skill.
