I haven't read even close to everything, so I don't know if it makes more sense if you read it all in order or not.

The crossover Grendel vs. The Shadow from a few years ago is one of the character's more recent stories and is probably one of the most underrated crossovers ever. You could try that since it's basically continuity-free and easy for someone unfamiliar with the character to get into. Otherwise just read whatever.

Generally, the arcs of Grendel are pretty self-contained. Hunter Rose which is who you see in OP's image is (personally) the coolest and the most well known. Dark Horse has released Omnibus for Grendel which has the main line as I recall. Then there's side story issues and crossovers.

There's crossovers with Batman and the Shadow. Another good series was "White, Black & Red" and "Red, Black, & White" where the creator, Matt Wagner, teamed up with a bunch of other artists in the industry to create a bunch of mini-one offs.

Anything with Grendel-Prime. Fucking awesome stories, and very Heavy Metal in style. War Child, Devil Quest, Past Prime are all collected in one of the Grendel Omnibus volumes. Batman/Grendel II fills in some story gaps in Devil Quest.
It doesn't really matter where you start with Grendel because it's a mantle that various people take up over time, and whenever a new series comes out it seems to take place in a random time period. For example a 26th Century Grendel story will be followed by modern day Hunter Rose Grendel story. Wagner did a recap book called Grendel Cycle that organizes everything and creates a proper timeline. The omnibus volumes also do a great job putting things in a cohesive order.
