My headcanon is that every once in a while Thanos collects all infinity stone just so he could pose a threat to an entire universe hoping it would challenge the strongest of beings into working together to stop him once and for all, and when it inevitably fails, and Thanos still comes triumphant, he scatters these stones across the universe and goes to spend the another century finding them just so he wont get bored of life.

I won't bore you by recapping Starlin's recent OGNs (Infinity Relativity/Relavation/Finale), but at the end the Living Tribunal was recreated with an alternate universe's Adam Warlock.
Ewing has specifically mentioned that by bringing up that the Living Tribunal is still mastering his new powers, and Thanos brought up the possibility that another Thanos was by Mistress Death's side, which is exactly what happened in the end of those OGNs. Thanos's waifu changing was a result of the end of Secret Wars, and being left to rot in a universe with no death. The specifics were mentioned also in Ewing's Ultimates, from the start of the CW2 tie-ins.

I read up to Revaluation. I got that an alt U Adam became the new Tribunal. At the end I just thought that Thanos just didn't know if he was the main universe Thanos or not and just told Death he didn't care anymore. I thought it was kind of Starlin making a statement to the fact that when he doesn't write his characters Marvel will do whatever the fuck they want with them but it really doesn't matter because this is HIS Thanos getting the good ending and calling it over.
