A ship is being boarded by some bad guys, and there's a little girl alien who wants to fight back or something. She (and her mom, maybe?) are from a species that has an attack like a bee stinger, where they'll die if they use it. I think maybe the mom uses it to save her kid?

That's more or less true, there was almost nothing coming out towards the end. IIRC There was a trilogy following Luke (the last book being lifted into Canon as Heir to the Jedi) and a Kenobi novel, and I don't remember any comics aside from one following Leia.

When they announced the Canon takeover, there was a fucking explosion in content. It was like half a decades worth of EU content in just a few months. I think Lucasfilm felt the need to "catch up", so they took advantage of the TFA hype train to fill in the OT gaps. Which they have done quite nicely, we pretty much know everything the OT cast got up to between ANH and ESB. Patiently waiting for some ESB->RotJ though. I think they have something big planned there, ala' Shadows of the Empire, because that is the one time period they have left almost completely untouched so far.

Things have calmed down now, but we're still getting semi-regular novel releases, alongside ongoing comics, cartoons, and annual movies.

Actually I think the latest we've gotten in between ANH and ESB is about 1 ABY, that's two years before ESB. Almost all the comics and books we've gotten set during the OT take place only very shortly after the Battle of Yavin. However we're probably going to be going in that direction soon, especially as Rebels seasons start placing themselves alongside the OT.

Cade was edgy as fuck but that was more hilarious than anything, but they did introduce his character development pretty poorly. Takes like 30 issues to stop being a dick and doesn't admit he's a Jedi until the very end.
Darth Krayt was a pretty good villian considering he's introduced in the old 2005-ish Clone Wars comics, even if his resurrection was pretty shoehorned. I also enjoy the Fel Empire and seeing them fight the Sith was an interesting conflict
And as for Volume 2, I think it was a good closure to the EU because all the Sith are fucking dead, after thousands of years and nearly 100 years of constant warfare because of them, they're stamped out. In terms of a grand happy ending in a space opera like Star Wars, it satisfied me
