Also, Becky and Sayid knowing each other by name when we as the reader never actually saw their first interaction with each other is a bit off-putting to me. It's a personal problem, maybe, but I feel as if we missed out on some form of a first-impression kind of meeting. Otherwise, we're somewhat led to assume that they've known each other for longer than the time they've spent together working at Galasso's.
But again, it's just me.

Nah, if you handle the food directly you need gloves. I've had to take food from customers and could only do it by tray or napkin, if at all. You have to change your gloves if you even go in the back because you might've transferred some contaminant. If the customer requests the sausage taken off then a) it wouldn't even be cooked with the sausage on in the first place, or b) they'd take it off...while wearing gloves.

It's basically the most important thing about food service besides FIFO.
