Well it could be the Robeasts ate more organic because they're not perfect. Take the gladiator for example. Wires everywhere and the design didn't really have ease of movement. Lade lizard on the other hand looked more organic and moved easier but still wasn't up to snuff. Voltron and the lions are somewhere in the middle.

Pidge isn’t real, but you are, and you deserve to see yourself in media. REPRESENTATION MATTERS. My favorite thing about Pidge isn’t that the media has ‘finally given us a canon whatever’, it’s that they didn’t feel they needed to. And you’re not confined to one interpretation either. Write, produce, and consume FTM, nonbinary, and cis Pidge all at once if you feel like it! Explore the character and yourself! They let Pidge be Pidge and didn’t label them, because it DOESN’T MATTER what TPTB say, it matters what you think, and it’s ALL GOOD. It’s great because, really, we can have our cake and eat it too.

Pidge is so many of us, and every interpretation is VALID because you are VALID, and NEVER LET ANYONE TAKE THAT FROM YOU, because THAT is who Pidge is.
