Because acceleration is a non-factor for most speedsters. They go as fast as they want whenever they want.
Now, a speedster with relatively low acceleration but NO upper limit on speed, on the other hand...

the thing is multiple speedsters work in dcu because there are several teams they can be part of
they also work on family mandate and that differs them from other heroes like superman so it's not actually bad either.

problem is shitty tv show writers, comics and cartoons handle it fine
