Adult cartoons probably would have been slower to break into the mainstream. Adult Swim might have quietly died out sometime in 2003 or 2004. If it didn't, it would chug along on low-budget animated shows and it would take a lot longer for networks to start shelling out big money to take a chance on non-kid related content.

I mean, the show probably would have gone on regardless. He was just the creator, he didn't personally hand-craft every episode. Family Guy would still probably end up on Adult Swim, and the fact that the creator died on 9/11 would probably have given the show even more more public interest. The show might have even gotten renewed quicker in this situation, and as a result the show would probably be slightly different without him guiding the writing staff, but everything else would have ended up mostly the same.

There's literally no way they would have brought it back. They didn't even like it at the time, and it got cancelled just a few months after 9/11. The death of the main creative force behind the show would've just cancelled it early, and they would have left it at that.
