Let it Go isn't even the best song in the movie (Love is an Open Door to be clear). Let it Go doesn't even really fit into the plot. Elsa clearly doesn't get over it like she says she is in the song, so goes right back to being miserable as soon as Anna shows up again.

Well, but Frozen appealed to people, somehow. It's full of flaws because it's so rushed; they kept changing the script and apparently the last revisions including the song First Time in Forever finally came in 5 months before release, which is an absolutely insane schedule. They struggled with trying to get the plot to work and really worked on it till the last possible moment. Sure, the end result is still a bit rough, but somehow it clicked with audiences worldwide in a crazy way so all that effort turned out to be worth it.
