Alderaan was a public demonstration against a significant target. Jedha looks to be a once significant place representing old glories (and a corrupt, dependent system to the Empire) since completely forgotten and left to stragglers. Jedha is basically Mecca for those who still believe in the Force, which the Empire has long since discarded. There are Jedi statues there. The Death Star, whose primarily weapon is powered by a massive string of Khyber Crystals, is effectively a giant lightsaber. Jedha's destruction is symbolic both in that it's the introduction to the reign of technology over the Force, as well as a giant mockery and slap in the face to the Jedi.

There are probably some offices, but not the huge complex of them that the cross-section illustrates. There's no point going to more planets than you need. All movies pretty much follow that guideline- the prequels show a few more, but each movie still only has a handful of planets that are actually important.

As for Rebels, it's mostly a budgetary thing. That's why the first season was set pretty much entirely on one planet.

Every iteration looks better than the ANH version.

Yes. Every film used a new costume. Hence why Vader's helmet had a better sheen in each appearance. Also, if you look closely, every appearance after ANH the lenses on his mask were double paned to help make Prowse's eyes less visible.

Early days of the Empire, put in a sector that still has fighting on the fringes of Imperial space. Maybe the Empire and Seperatist hold outs sans droids. You can even have Boba interact with an old/soon to be decommissioned clone if you want feels.

The Mexican stand off can occur early, with Boba losing and getting the dent in his helment. The actual villain is the local Imperial Governor who tries to rip the Bane/Hondo/Fett off. The ending is the three getting just desserts.

We have no idea of the plot of the movie or the facility their infiltrating. Even if they are screening for droids, K2SO could have had his credentials changed and he would be just another droid. For what it is worth, if this were Rebels I think they'd resort to the usual ploy of telling the guy it wasn't a scheduled transfer but a personal order of a priority prisoner from Grand Moff Tarkin or Vader. Then the guy would wonder if it's a good career move to appear to question their authority to send prisoners wherever they see fit.

It's more about Han and Luke not really knowing what the heck was going on or who was involved. They were just making it up as they went along (which also makes them perfect for the Rebellion).
