Ptiluc made a a lot of series about rats. Rat's, Ratfaces, Pirat's, Pacush Blues,... Most are quite bleak.

Cats often kill for fun and are pretty dumb. Also they have a reputation of being mistrusting, especially compared to dogs.
Not to mention that cats being small paired with the way a cat exhaust it's prey (through a game of aptly named "cat and mouse") make them seem like a petty predator that sadistically plays with anything that would not eat them.
Also cats have that mystic aura to them, probably because of their very human-like faces. It's why catgirls are so popular in fiction.

Yeah, the main heroes usually win the battles. Many of the smaller side-heroes end up dead, and sometimes the battles aren't all that's at stake, either. The best example is that there's a legend behind the Laterose of Redwall Abbey, and it's not a joyous one. It's the hardest battle that Martin the Warrior lost, and he walked a path of solitude in life because of it.
I haven't read the books in years, but there's plenty of other examples of loss in those books. There is plenty of fun and good times in the books, but there's much darkness and hopelessness in some of them as well.

okay, I don't think you realise just how tight a bind Mrs brisby was in.
Firstly, Timmy had advanced pneumonia: pneumonia fucking kills people. My dad got it last year and it fucked him up so good one of his lungs failed and he passed out, and the doctor had to give him fucking horse pills to deal with the infection. Guy's built like a god damn meat wall and it still knocked him on his ass. Timmy is a little kid and Mr Aegis (who is the most knowledgeable person Mrs Brisby had access to and trusted) expressly told her not to move him or else his scrawny ass would fucking perish. Timmy's only hope of not dying rested on his mother keeping him warm.
Secondly: this limited her options down to just about three - move Timmy and definitely kill him, do nothing and get them all killed or move the entire house, thereby potentially saving the whole family. I'll repeat this for clarity: pneumonia fucking kills people. Timmy would die if he was exposed to the shock from the cold - bedbound or otherwise. This is why she goes to the Great Owl. He's the only one she can think of who has the knowledge or capacity to help her move. He pretty much told her to do one until she mentioned her husband, thusly introducing her to the rats, who definitely COULD help her move the whole damn thing at once. problem solved.
And finally: she had no damn clue that Jenner was planning to put Nicodemus in the ground. She was entirely unaware of the political current beneath her feet and her only goal boiled down to "save family". Were it not for that one asshole, the whole thing would have gone just fine.
TL:DR: Mrs Brisby had absolutely no other choice that didn't run the risk of killing Timmy, hence her entire ordeal.

That's not always true in the books though, either. It's a predominant majority, but there are some creatures that are supposed to be evil that end up siding wuth good, and there's even a few characters whose species align with good that end up being evil as well.
They are far and few between but they do exist.
What Redwall does offer, for both good and evil, are many bad-ass female characters, which for the time the bioks were written, was pretty fuckin' special and neat.
