Many pistols actually have a de-cocking lever on the side. It releases the hammer without setting off the round; so it can be pulled back again. But I assume this is just to switch between the DA/SA trigger weights.
You can't rack the slide again though, that just imitates firing the gun thus ejecting chamber and allowing the magazine to put a new one in. If you removed this feature, you might be asking for failure to eject or jams that can't be quickly fixed!
