Id say the idea is rooted in the fact that the things that make SU standout somewhat mature thematically ARE themes that are curtailed by its age demographic. Adventure Time could, for example, pretty much do what it wanted to do without being on AS. If it were reproduced to be more mature, then ya, itd probably just be more edgy or with more dick jokes.

I really think SU would be really interesting if it could go further in its execution of themes

First off Steven Universe would get like 1/10 as many episodes and they'd be aired years apart making it difficult for anyone to really give a fuck about it.

The fandom wouldn't exist in it's current scale with that kind of schedule especially with the narrative SU went with. It established the characters with a quiet narrative building up in the background. They would have had to ham fist the narrative to get people interested and completely shelf the character development or at the very least heavily mute it.

SU being on cartoon network allows it to get not only a larger audience with children but more episodes to develop the plot, a more consistent airing schedule, more re-run potential, and larger budgeting because of the scale it's been able to attain.

I really don't believe SU could have been nearly as successful on Adult Swim.

You should rephrase this. The focus shouldn't be adult swim, it should be focused on "would Steven universe benefit from being a higher age rating?".
Adult swim is comedy focused as many pointed out, so unless the show became a lot more comedic to meet that expectation, it wouldn't last as long as it has. It's safe where it is now, because it's given freedom within a certain age group. It very well could benefit from a higher age rating, but I don't think it'd need TV-MA. Maybe just a teen rating, like a PG-13 kinda thing, would be enough for them to do whatever without feeling inhibited.
Hell they barely need that if violence and heavy themes are what you want, you should see what The Clone Wars did with just a TV-PG rating: all-out war with humanoid aliens as opposed to just droids, terrorist plots, an arc devoted to a slavery trade boom, there's a lot you can do when you're being produced and advised by papa Lucas. Less people will be the type that raise a hand and take issue with something.
And it's important to remember, of course, that violence and heavy themes aren't /necessarily/ mature, it's how they're handled too. Edge=/=quality, just making that clear.

Adventure Time - wouldn't work, as adult the show can get at times with its humor its not really in your face adult, more subtle and comes with the idea "wow i can't believe they put this on a kid's show" when if put on an adult show it'd be washed over. an adult rating could possibly open themselves up for more zanny plots, but the over all feel of the show would suffer, since its humorous when they do fake curse words rather than use real ones
Regular Show - probably would work well, since the times they have to censor themselves is more annoying than charming, like they say soda, but you know they really mean beer and stuff like that. it'd probably be the same show overall.
Steven Universe - it really wouldn't, the show is about a child and their optimism, it would always work better as a kids show, unless if you want to watch a completely different show entirely

SG was wayyyy before AS. And I think the only thing added was ass. A better middle ground for SU might have been the old Toonami Midnight run. Allows for more "mature" actions but without DUDE WEED AS injections.

I think the biggest problem with Steven Universe is not censorship from being on CN, it's being stuck to 15 minute episodes. At times they have to rush things along to fit everything into the time.

It's weird how they do this. They show Gems getting stabbed, but only with the actual place where they're getting impaled just slightly off screen. And they can show Gems with a sword or bit of metal through them after they've been stabbed. But they can't show the moment that they get impaled.

They'd probably make a lot more content surrounding the David bowie/old 70s prog rock and androgyny themes a lot more, and probably be able to make a lot more direct refferences to adult material and generally more trippy stuff thst kids wouldn't be into.

It feels like they occasionally have to dumb their work down, a lot of the design work for the show suggests themes and imagery that's way more far out, but too out of the grasp of children to really like. Stuff like lion's original design or basically any of the old gem stuff. Feels like they'd probably be a lot more creatively happy of the I'll could occasionally go full holy mountain on certain bits.
