Making Pidge a girl was one of their first ideas, they wanted to show that one of the characters can be a girl without changing their role in the story.
They also wanted to show more realistic reactions from the paladins to the whole Voltron thing instead of them just being instantly okay with everything.
They talk about the cliffhanger too but during the actual panel it was confirmed that the end of S1 with the cliffhanger was a result of them running out of time, it was initially supposed to be softer than that, but that ending will probably happen in S2 instead. They also say that with the Netflix model they can hint at stuff early on and then slowly build up to that throughout the whole show, so if you saw something hinted at in S1 it'll probably happen later and that the characters will evolve.
