Yes? They do their "young and attractive heroine / hero" figures in a very similar style, it's the Disney style, it appeals to people. Wide eyes, small nose, oval face. Anna and Elsa actually varied from that face a bit with their round moonfaces, but people still complain.

However with the characters that aren't meant to be cute heroines, there's more variety, look at Mother Gothel or Vanellope or the servants in Frozen etc. But the heroines that are meant to sell dolls look similar, it's the "cute Disney heroine" style. Well, that's because Pixar went too far in one direction without compensating on the other.

Disney's stylized humans still have enough 'realism' in them where the realistic backdrops don't feel out of place, yet the backgrounds have so much life and color to where they still feel 'fantastical' in a sense.

I haven't watched The Good Dinosaur, but from everything I've seen, it looked like they were heavily focused on making their backdrops look very realistic, but their characters had too much cartoon simplicity to them.

Not entirely sure, but from what I've gathered my guess is the story is:
Moana needs to save her tribe from some vague threat of which the details haven't been released. In order to do that, she needs to go exploring and find some other island for reasons we don't yet know. Her people at one time used to be great explorers and really good with that shit, but some generations before her they stopped doing that and just stuck to their own islands and she doesn't know why. So she's going to be the first great explorer in a long time, figure out and fix whatever reason her people aren't exploring now, and usher in a new age of exploration while also saving her people from that original threat. She's probably going to do this despite her father's disapproval. And along the way she'll get some animal sidekicks and meet Maui and we'll get whatever his side plot that may or may not be tied to the main plot is.
