Vision is great but it'll being ending soon.
Hulk is great so far.
Deadpool and Daredevil are both solid.
Karnak and Mocking bird are only a couple issues in but they're both good so far.
Moon Knight might be worth looking at. First issue was good.

All of which I'd recommend. Although TAHulk is, as you said, has Amadeus Cho as the Hulk (he's Korean), so you might want to avoid that one if that kinda thing bothers you.

If you've followed Ellis' work, you've seen same one note character before in almost anything he has written. If you're Ellis casual, you'll like it. And it's not even well written.

Why does a good Daredevil story have to be innovative exactly? Besides Matts a procecutor now and has a sidekick which are both new things. At worst I think its paced a bit too slowly but I find it pretty decent.
