Because of his weapon. It's one of the purest in the show, clearly designed right after Yang's, if not simultaneously. In fact, practically every part of his design is obviously supposed to be similar to, and contrast Yang's own.

I think Mercury is supposed to be around for a long time. And combined with being sympathetic, that suggests to me that he could be set to turn around later on in the series.

My number one thing to replace the dance arc in Vol 2 with would be RWBY interacting with the villains.
I'd have a Yang and Merc sparring match with a good degree of banter and sexual tension, as well as Ruby and Weiss talking to Emerald. Ruby has generally been very receptive to Emerald every time we've seen them interact, so I think it'd be funny to see Weiss be at odds with her. Afterwards, Weiss would confront Emerald alone and interrogate her because Weiss has grown up around people putting on facades, so she'd see through Emerald's bullshit.

To take this even deeper- we aren't even sure if Weiss and Em will be proper rivals, yet. I do think that they could have a really entertaining rivalry, but them fighting in the intros might have just been a stylistic decision (brief shots of each hero duelling the villains because it looks cool). Wouldn't work for two reasons.

1) It would give Ruby more than enough time to react against Cinder and at least save the body. No disney death.
2) They probably WANT people to speculate and debate on whether or not she'll come back to life as another way to keep people talking aboit and interested in the show between seasons.

They probably want the option to bring her back available to them too (I'm not saying they WILL, calm your autism), just in case they want to a few seasons down the line.
It's easier to explain bringing someone back from magical glowy Disney death dust than it is to bring them back from a brutal and overly graphic killing and turning them into plain ol' grey and white ashes.

Again, not saying they WILL bring people back from the dead, but they'll certainly give the popular characters either vague or cartoony/disney deaths to at least keep their options open.

On the topic of Roman getting eaten, I seriously doubt he is in any way actually dead unless the second a Grimm eats something it gets dissolved or decimated by whatever the fuck is on the inside of a Grimm. He was inside that Grimm, having been swallowed whole in one swift movement sans any chewing, for all of a few second before Ruby curb-stomped it into an explosion behind her Which I feel ruined any dramatic tension Roman's death could have given if Ruby had a stronger 'flight' reaction instead of this 'fight' reaction, but that's besides the point. That Grimm obviously got its ass pushed in and died, either right after or when the ship inevitably crashed. In the latter situation, the Grimm would have acted like a big ass meat shield all around Roman, and Grimm aren't exactly soft or squidgy so it could take some impact easy. But either way, that Grimm will have dissolved upon death, either just after swallowing Roman or a short while after. The only possibly way Roman couldn't just walk away after that is if a Grimm dissolving also dissolved any non-Grimm things it is in contact with and has inside it, which we've not seen any examples of yet.

There is no logical way he seriously could have died from what happened, and honestly I'd be pretty disappointed if he never shows up again because we'd have to assume that after being swallowed whole for a whopping three seconds, he decided to just give up, and that'd be dumb as rocks.

Neon Katt is actually one of the most effective, skilled fighters that we've seen so far. She utterly dominated Yang in a fight, her superb mobility making her impossible to hit whilst her quick attacks steadily wore down her enemy. If it hadn't been for simple misfortune, Neon still would have beaten Yang in their fight.
