Honestly a character wearing bulky headphones can mean a lot of things. In Neku's case it was because he wanted to block out the world.

With Ruby it'd probably be because she's a music lover or her wanting to hear battle music during her fight scenes. This could actually be used as a character point as it makes her less conducive to team fighting. Her not using them anymore during fights, or keeping in contact with team RWBY via radio could mark her learning to be a better leader.
