The whole Hulk issue of Ultimate Team-Up is something that feels more in place with 616 story or say Marvel Adventures perhaps, as opposed to Ultimate verse itself.

He's saying that these stories don't really jive with Ultimate Hulk. Hulk is rarely green and it feels like a 616 story due to the military hunting Hulk. Hulk is also not eating people.

The only reason the Ultimate Universe worked out is because Bendis was such a funny writer for Spidey and Bagley's art was great. When that duo broke up the whole thing kinda withered away
