Anyway, you're just given the option to choose Jun instead of the girls, and it gives you a little scene to use in demon negotiations. It doesn't affect the story at all, because P1 and P2 don't have the dating sim elements. Still, it's a fun game to play, with a good story and likeable characters.

Sure, they might be talk like an old married couple, don't (necessarily) have female love interests, and are shown to hold affection towards one another, and several moments in the game imply their relationship might be more than platonic, plus certain statements from both extra materials and even from interviews mention their love.

But it's still technically not confirmed.
The physical attraction was only implied, the affection can be dismissed as simply friendship, the statements were all using very vague terminology.
Long story short, they never say it, so it has some plausible deniability.

The only place Shizaya is canon is in Erika's mind. Izaya doesn't seem to have much of an interest in sex, at all.
There is actually a very interesting moment in the seconf volume of the Izaya-centric light novel with a character thinking how Izaya would be if he were ever in love and reaching the conclusion that's just an absurd idea to even entertain. I've always thought Gintoki and/or Hijikata were a little gay before i knew people shipped them. For example:
