in short - yes
You do not get quite the same "al dente" crunch, but you do get very close creaminess in terms of starch content.
Yeah. One of my favorite Italian restaurants in Japan used koshihikari (a variety of Japanese rice) in the 4 cheese risotto. It was awesome.

I use the same rice I'd use for sushi, risotto and rice pudding: arborio (or whatever tf it's called, the round starchy one)
Thing is, in euroop if its labelled "rice pudding"-rice, its about half of what "sushi-rice"'d cost ya. About the same with "risotto-rice". just get the cheap one, its likely the same sort anyways, or good enough to fool all but wapanese tastebuds.
