I use beef and pork shanks for feijoada. They break down real nice after simmering with beans for 2 hours
Beef cheeks. They're definitely a low and slow kind of meat. You can stew, taco meat, anything really. The oddest but most delicious combination we've had with them was in the crock pot with onions, garlic, red wine and blue cheese dressing. When it's tender, you make a gravy out of the leftover liquid
Smoked pork knecks are great for cooking with white beans. After simmering for 3 hours or so the shreads of meat have fallen off the bone. They work nicely for tough greens as well. Also chicken livers, hearts and gizzards.
