why does chunks of ground beef mixed into the red sauce taste different from meatballs plunged into a pool of chunky red tomato sauce?

uggghhhh, i just broke apart a bunch of tube ground beef and cooked it with salt pepper and garlic in a cast iron pan... it was just cooking in its juices, i drained those juices and dumped the meat into pizza above the cheese and below the sauce.
way too much meat, not enough cheese or sauce. i used wayyy to little cheese for a deepdish. w/e when im hungry over the next 2days it will be great
