What's your favorite rabbit recipes, /ck/? I've got five rabbits to butcher and I'm looking for something slightly more interesting than the usual rabbit roasted with vegtables.

Let's get some tasty organ recipes, too, we aren't shy here.

My neighborhood is absolutely crawling with these fuckers -- they're fat and bold and have little to no fear of man; I can walk to within three feet of them on my property before they react. Any tips/caveats on capturing some for food purposes?

Snare traps are the usual choice, but in a suburban environment you're likely to kill someone's pet. I would suggest live-capture cage traps that are used to catch raccoons and squirrels, since yours are so big, use the raccoon-sized traps. Smaller rabbits would be caught by squirrel-sized cage traps.

They're pretty dumb and harmless, so once you catch them it's all clear. The only thing to be aware of is to not let them kick you, their legs are quite strong.

Isn't rabbit a poor choice of meat, nutrient wise (fat)
Rabbit meat is so lean that if a person ate it exclusively they could develop something called “fat-hunger” also known as “rabbit starvation.”

Why would that matter? "Rabbit starvation" is only a problem if someone is in a literal survival situation and has zero other sources of fat in their diet for extended periods of time.

Assuming anon is not going to go camping with nothing but rabbit to eat for months on end this won't be an issue at all because he/she will be getting sufficient fat from other foods.

Yeah, I butcher a few at a time and freeze them to cook later. I live in a city, I just enjoy rabbit. I mean, pair some meat rabbits with a few yard chickens for eggs and you effectively prevent that problem, too.

Rabbit liver is also very fatty, so that should work, I think.

....not to mention the cooking oil you'll surely be using for your dish.

Rabbit starvation doesn't exist in the context of home cooking or food from restaurants. It's only an issue in literal survival situations where someone is eating nothing but rabbit for a very long time. That's obviously not an issue here.

Who did it doesn't matter.

What matters is that even the tiniest bit of fat resolves the problem, therefore "rabbit starvation" is a rare historical curiosity, not something that anyone thinking about eating rabbit needs to concern themselves with.

It's made with garlic, red bell peppers, artichokes, fresh fava beans, grated/crushed tomatoes, paprika, saffron, stock, and medium-grain rice. People over in Spain usually use a mixture of chicken, rabbit, and snails for this.

Confit rabbit legs, unless it's [spoiler]duck season[/spoiler]. Rabbit tacos (Ratos?). Rabbit rillettes. Rabbit bourguignon. Rabbit burgers. Rabbit roasted with red peppers, reblochon and red leicester. Rabbit tartiflette. Use it finely chopped as a stuffing for courgette flowers, aubergine, stuffed eggs etc. Goes well in any slow-cooked meal i.e. stews curries soups(UMA DELICIA). Rabbit brandade.

Or just eat the fuckers raw if you're brave and confident in your immune system. [spoiler]just kidding, really don't do this.[/spoiler]
