"Oven fried" generally sucks. Restaurants don't use the method because people would not come back again. It simply doesn't produce good results.
Also, the Doritos or Cheetos coating will never be used at a restaurant because it ruins the fryer oil. Its basically something people do once so they can take a picture for Facebook, because they saw someone else do it on Facebook. The idea sounds better than the results.
