Dry age on counter for 3 weeks for max beefy. Sear on high. Oven roast to temperature. Serve with a red wine reduction with mushrooms and shallots.

I've just had a 5-6 cm thick discount cut (french cut, dunno the anglo equivalent). Seasoned with salt, pepper and thyme. Popped it in the oven, 220°C for 20 minutes, perfect mid-rare even though it was cheap meat.
