Drain the cucumbers or it turns watery. Find what amounts of vinegar salt and fresh herbs you like best. Use olive oil

OP Mediterraneanfag here, listen up
>peel and grate cucumber
>heavily salt cucumber shreds and put into cheesecloth in a colander, put a book or other weight on top and leave a few hours to drain
> meanwhile, finely mince several cloves of garlic, a good amount of fresh dill and half as much fresh mint
>mix drained cucumber, mint, dill, garlic, and your full fat unflavored Greek yogurt
>taste and add salt as needed
>let sit covered in fridge a day before you use it to let flavors meld
For about 12oz of yogurt I use two small, one and a half medium or one quite large cucumber, 3-4 cloves garlic, maybe six mint leaves, and an entire package of fresh dill which only makes less than a quarter cup chopped.
