It's all about smell, the color comes from oxidation. If it smells like shit, give it a wash and pat it dry. If it still smells like shit, don't fucking eat it. If it doesn't smell at all you good to go son.

This. Beef that is nearly bad has a tangy foul smell. If there is any stickiness or sliminess to it beyond the normal cold, wet, fatty feel, it will make you sick.
