Yes and no, sometimes yes, but you're not thinking of it correctly. The difference is that the smaller pieces allow you to have both. You can combine the smaller French cuts to make similar large American cuts, but with American cuts we make the cuts so broad we take apart cuts that the French would otherwise have. See that massive slab of the back leg in the American cut? Since we made that cross section cut we lose out on the loin options you see in the French cut there. It's smarter but more work and therefore less economical.
