I found myself recently having an unusual affinity towards sage lately. I've had a few desert themed mixed drinks with tequila and gin that had sage in them and it was quite delicious.
It got me thinking that this is an underutilized herb in culinary dishes. What are some great recipes that make the this herb, and thus dish stand out?

Sage goes great with butternut squash which is in season now. Cut the peeled butternut squash into cubes and roast it until slightly caramalized on oiled cookie sheet (@15 minutes at 450F). Meanwhile make a sage butter or EVOO by heating on low with finely chopped fresh sage and drizzle over the squash when done. Really simple but good.
It's an absolute requirement in a poultry sausage stuffing/dressing.
