Beef Barley Stew
>3 lbs beef chuck roast cut into cubes
>2 large onions diced
>1/2 lbs of mushrooms halved if large
>1/2 lbs carrots cubed or baby carrots whole
>2 tbs tomato paste
>1-2 cups of dry red wine
>bay leafs x 3
>dried thyme
>about 6 cups beef stock/broth/bullion (or even water in a pinch)
>1/2 cup pearl barley
>optional but recommended - beef marrow bones for extra flavor
Brown off the beef seasoned with salt and pepper in a skillet in batches and transfer to slow cooker when browned. Add onions to skillet and cook until translucent. Add mushrooms, tomato paste, thyme and bay leafs to skillet and cook for a few minutes until tomato paste turns rust colored. Add wine to skillet to deglaze. Bring to boil and reduce by half then add contents to slow cooker. Add carrots, marrow bones to the slow cooker and cover with stock or water. Cook on low for 8-10 hours. Switch to high, add barley and cook another 30 min to an hour.
